Boil
BOILING WATER : 3 minutes minimum after boiling again for 1kg of frozen product


Steam
Steam oven: 12 minutes at 100°C minimum for 2.5 kg of frozen product in a perforated gastronorm.

COMBINATION OVEN: In a full Gastronorm dish without lid + sauce of your choice: From -18°C: 15 min. at 150°C. BOILING WATER: In a salted boiling water: From -18°C: 12 min. STEAM OVEN: In a perforated Gastronorm dish without lid: From -18°C: 12 min.
