Tobiko is a Japanese name for the calf of the flying fish. This fish is widespread throughout the world. That is why the period during which this fish is full of eggs is quite different. Flying fish has typical, very small eggs, which are naturally yellow/orange. The flavor of the eggs is slightly salty and fresh. Tobiko is a popular fish pack and is artificially colored for the consumer and is available in the colors red, black, Orange, yellow and green. There is some taste difference to be seen. The red tobiko has a light chilean pepper accent. The Orange and black colored flavors are the same, the black tobiko is colored by squid ink. The yellow color has a pinch of ginger, while the green tobiko has the flavor and color of wasabi (green horseradish).
