Tobiko is a Japanese name for the calf of the flying fish, which is common all over the world. Therefore, the time when this fish is full of eggs is very different. Flying fish has typical, very small eggs that are naturally yellow/orange, the taste of the eggs is slightly salty and fresh. Tobiko is a popular fishsuit and is artificially dyed for the consumer and is available in red, black, orange, yellow and green. The red Tobiko has a slight Chilean pepper accent, which makes it a very tasty dish. The orange and black flavors are the same, the black Tobiko was colored with squid ink. The yellow color has a pinch of ginger, while the green tobiko has the taste and coloring of wasabi (green horseradish).
