Anchovies marinated. What is Anchovies? Anchovies (Engraulis encrasicolus) is a small, silver-colored fish that belongs to the herring species (Clupeiformes). They are often confused with sardines, but are smaller and have a pronounced taste. Anchovies have a small narrow cup with a characteristic short lower jaw. The top of the fish has a dark blue / black color that extends to a silver-colored belly side. Anchovies are widely used in Mediterranean cuisine. The anchovies are best known in the south of Europe. Habitat; Anchovies are found in large schools in shallow waters of the Eastern Atlantic, North Sea, Mediterranean and Black Sea. They migrate seasonally, moving south in winter and returning to northern waters in summer. Marinated anchovies are often prepared by marinating the fish in a mixture of vinegar, oil, herbs and spices. This process improves the taste and extends the shelf life of the fish.
