Tobiko is a Japanese name for the calf of the flying fish. This fish is widespread throughout the world. That is why the period during which this fish is full of eggs is very different. Flying fish has typical, very small eggs, which are naturally yellow/orange. The taste of the eggs is lightly salty and fresh. Tobiko is a popular fish suit and is artificially colored for the consumer and is available in the colors red, black, orange, yellow and green. There is some taste difference to be observed. The red tobiko has a light chilean pepper accent. The orange and black colored flavors the same, the black tobiko has been colored by squid ink. The yellow colored has a pinch of ginger in it, while the green tobiko has the taste and coloring of wasabi (green horseradish).
