Description

Dried and smoked bonito flakes. Traditionally, the arabushi and karabushi are sold as a whole and hand-scraped at the time of consumption. Nowadays you buy the flakes ready-made in bags or even in grains like katsuobushhi. You can serve the bonito flakes with any Japanese dish. They are also used to make other Japanese products. Like dashi, a tasty fish stock made of these flakes and kombu (dried seaweed). Also in the increasingly popular furikake the flakes are processed, together with dried wasabi, different species of seaweed, sesame and vetain.

Some thicker plantings (kezuri-katsuo) are drawn together with Kombu japanese broth (dashi). The thinner shavings (hana-katsuo) are added as a taste maker to all kinds of dishes. The funny thing is that a little bit of bonito flakes on a hot dish by the rising heat seem to dance.
