Description

Bacalao is the Spanish name for wet salted and dried cod. It is also known as klipfish. This bacalao is produced from the saithe and dried and salted. Saithe (POLLACHIUS VIRENS) or better known as pollack, is family of cod, can be 1,20 meters long and become 20 kg heavy. The lower abdomen and sides are silver gray and on its back are significantly darker in color. Dried saithe, which we are talking about now, has more flavor than the dried cod and is even more advantageous in pricing. The saithe is stacked with a large amount of salt between the layers. After 2 to 3 weeks, the salting process has been completed and the saithe has been dried. The fish must then be stored in a dry and cool place at a temperature between 2'°C and 5'°C. This makes it possible to store the fish for up to 2 years. In this way it retains its taste and natural nutritional values.
