Description

DAB is a very undervalued fish. In the professional kitchen you hardly encounter them, but the DAB certainly deserves a place on the menu when the season is over. Lovers will see the DAB as a good alternative to the plaice which is very meager in the winter months. DAB can achieve a length of 40 cm with a weight of 1 kg. Large specimens can only be seen in the waters around Iceland. DAB is found in the European waters of Iceland, Ireland and Norway and also in Dutch waters to a depth of 150m. DAB has a distinctive skin with open scales. When you iron over it by hand, it looks like sandpaper. The DAB has a small head (and therefore a large fillet yield). The DAB has a light brown color.
