Description

After the catch of the cod the cod is machine-felled. After that, the fillets are salted with sea salt, this maturation process takes 2 to 3 weeks. The cod then enters a wind tunnel for 40-90 hours and the dry salted cod is ready for consumption. It is remarkable that the salted cod is not dried in the sun and that makes the big difference with the bacalao/bagufish.
