Description
The cheek of the bluefin tuna is called 'Hohoniku' in Japanese. The cheek of the Bluefin is a less frequently used part and difficult to obtain. The cheek is the inner part of the face of the bluefin tuna. Bluefin tuna cheeks can weigh 300-600 grams per piece and have a fleshy structure. The cheeks of the masonry tuna are a treat. Because it is very fibrous, it needs a longer preparation time at low temperature to get soft. Fresh tuna cheeks are among the possibilities, but the frozen version is more readily available.
