Description
UHP stands for Ultra High Pressure. This machine processes lobsters at a high pressure. These UHP lobsters are offered whole and raw in the following sizes; 425-510 gr, 510-560 gr, 570-640 gr and are only sold in boxes of 4,54 kg. The UHP lobsters fall 100% in the Fish and Season program and are MSC certified. After the catch the lobster stays in a cold seawater basin for 24 hours, the lobster is purified during this period and falls into a hibernation. After 24 hours, the lobster enters the UHP machine and the pressure is increased very slowly to 3000 bar. The lobster is thus killed in an animal-friendly way. The pressure causes the meat to come out of the bowl and is easy to remove.
